STREET FOOD { SAMOSA}




INGREDIENTS

FOR DOUGH

1. 1/2 CUP WHEAT FLOUR
2. 1/2 CUP PLAIN FLOUR ( MAIDA)
3. 1/2 TSP CAROM SEEDS ( AJWAIN )
4. 1 TSP GHEE
5. 1/2 TSP SALT
6. 1/2 CUP TO 1 CUP WARM WATER

FOR FILLING

1. 2 BOILED POTATOES
2. 1/2 TSP TURMERIC POWDER
3. 1/2 TSP RED CHILI POWDER
4. 1/2 TSP GARAM MASALA
5. 1/2 TSP AMCHUR POWDER
6. 1TSP CORIANDER POWDER
7.1TSP GINGER GARLIC PASTE
8. 1 GREEN CHILLIES FINELY CHOPPED
9. CORIANDER LEAVES FINELY CHOPPED
10. 1/2 CUP BOILED GREEN PEAS
11. OIL
12. SALT

METHOD FOR DOUGH


1. IN A MIXING BOWL ADD 1/2 CUP OF WHOLE WHEAT FLOUR AND MAIDA. MAKE A WELL THEN ADD SALT, CAROM SEEDS AND GHEE. WITH THE HELP OF YOUR FINGER TIPS MIX ALL THE INGREDIENTS.

2. NOW SLOWLY ADD WARM WATER AND PREPARE A LITTLE HARD DOUGH. THE DOUGH SHOULD NOT BE VERY HARD. AND IT SHOULD NOT BE VERY SOFT.

3. COVER THE DOUGH WITH THE HELP OF KITCHEN TOWEL ( WET KITCHEN TOWEL). AND KEEP IT A SIDE FOR ALTEST 20 MINUTES. 

 FOR FILLING 


1 . BOIL AND THEN CRUMBLE THE POTATOES WITH YOUR FINGER TIPS. DO NOT MASH THE POTATOES.

2. NOW ADD GREEN PEAS AND ALL DRY INGREDIENTS. GENTLY MIX POTATOES AND ALL SPICES AND GREEN PEAS.

3. DIVIDE THE DOUGH IN 6 EQUAL BALL.

4. ROLL OUT THE BALL IN OVAL SHAPE SIX INCHES LONG AND FOUR INCHES WIDE. USE SOME OIL TO COAT THE COUNTERTOP. IF NEEDED TO KEEP THE DOUGH FROM STICKING.

7. USING A PIZZA CUTTER OR A KNIF CUT ACROSS THE LONG SIDE OF THE OVAL TO CREATE TWO SEMI CIRCLE PIECES.

8. COAT THE EDGES WITH WATER. USING YOUR FINGER TIPS.

9. PICK THE TWO CORNERS OF THE SEMI CIRCLE AND BRING THEM TOGETHER, EDGES OVERLAPPING SLIGHTLY TO FORM A CONE. PRESS DOWN ON THE SEAM  TO STICK IT. ITS IMPORTANT TO DO THIS  THROUGHLY, BECAUSE YOU DONT WANT YOUR SAMOSA TO OPEN WHILE FRYING.

10. INSIDE THE CONE, PLACE A  TEASPOON OF THE  FILLING.

11. NOW SEAL THE TOP OF THE SAMOSA WITH THE HELP OF THE FORK.

12. REPEAT FOR REMAINING  SAMOSAS.

13. IN A WOK OR A FRYING PAN HEAT THE OIL.

14. WHEN THE OIL GETS HOT DROP THE SAMOSA ONE AT A TIME. DO NOT OVER CROUD THE PAN.

15. FRY THE SAMOSA UNTIL THEY ARE GOLDEN BROWN.

16. DRAIN ON PAPER TOWEL

                                        YUMMY  SAMOSA ARE READY.


YOU CAN FRY THE GREEN CHILI ADD SOME SALT AND LEMON JUICE ON IT TRUST ME IT WILL TASTE REALLY VERY GOOD AND SERVE SAMOSA WITH SAUCE OR CHUTNEY.
