PANEER KOLHAPURI

                                                       

             INGREDIENTS 




1. 250 GRAMS COTTAGE CHEESE (PANEER).(CUT INTO TRIANGLES)

2. 1TBSP COOKING OIL.

3. 4-5 GREEN CHILLIES CHOPPED.

4. 2 TSP GINGER GARLIC PASTE.

5. 1TSP CORIANDER SEEDS.

6. 2-4 DRIED RED CHILLIES.

7. 4-5 GARLIC CLOVES.

8. 1/3 CUP DRY COCONUT PIECES.

9. 4-5 BLACK PEPPER.

10. 2BAY LEAVES.

11. 1/2 TSP SESAME SEEDS (TILL).

12. 1INCH CINNAMON STICK.

13. 2 GREEN CARDAMOMS.

14. 2 ONIONS FINELY CHOPPED

15. 2-3 TOMATOES PUREED.

16. 1TSP RED CHILLI POWDER.

17. 1/4 TSP TURMERIC POWDER.

18. 1/2 TSP GARAM MASALA POWDER.

19. 1/2 TSP CUMIN POWDER.

20. 1/2 TSP FENNEL SEEDS.

21. SALT TO TASTE.

22. FRESHLY CHOPPED CORIANDER LEAVES.

           METHOD 

1. IN A HEATING PAN ADD SOME OIL AND NOW TO THIS ADD DRIED RED CHILLIES, CLOVES, GRATED DRY COCONUT,(WHOLE)BLACK PEPPER, BAY LEAF, SESAME SEEDS, CORIANDER SEEDS, CINNAMON STICK, GREEN CARDAMON, FENNEL SEEDS AND CUMIN SEEDS. MIX WELL WITH THE HELP OF SPOON OR SPATULA AND LET THEM ROAST FOR AROUND 2-3 MINUTES. DON’T OVER COOK.


2. LET IT COOL DOWN. THEN TRANSFER THIS ROASTED MASALA INTO A GRINDING MOLE AND GRIND IT WELL TO MAKE A FINE PASTE OR A POWDER FOR AROUND 4-5 MINUTES. THE POWDER OR THE KOLHAPURI MASALA IS READY. KEEP IT ASIDE.


3. HEAT A PAN ADD OIL AND ADD GINGER GARLIC PASTE AND SAUTE WELL NOW ADD CHOPPED ONIONS AND GREEN CHILLIES AND LET IT COOK FOR AROUND A MINUTE ON LOW FLAME UNTILE SOFT. NEXT  ADD THE TOMATO PUREE, SALT, TURMERIC POWDER AND MIX WELL COOK FOR AROUND 4-5 MIN AND MAKE A THICK GRAVY UNTIL THE OIL STARTS COMING OUT. IF YOU WANT YOU CAN COVER IT  WITH A LID. NOW ADD THE PREPARED KOLHAPURI  MASALA  AND MIX IT ALSO ADD GARAM MASALA POWDER AND STIR IT AROUND 2MIN ADD VERY LITTLE WATER AT THIS TIME YOU DESIRE.


4. ADD THE PANEER PIECES AND VERY LITTLE FRESH CORIANDER  AND MIX GENTLY WITH THE HELP OF THE SPOON OR THE SPATULA SO THAT THE PANEER DOESN’T BREAK. LET IT COOK FOR ANOTHER 1MIN UNTIL ALL THE PANEER  IS COATED WITH GRAVY.

5. SERVE IT AND GARNISH WITH THE FRESH CORIANDER AND A FRIED RED CHILI ON TOP.

YOUR PANEER KOLHAPURI IS READY YOU CAN HAVE IT WITH GARLIC NAAN, PLAN ROTI, PARATHA AUR EVEN WITH RICE.
